Chapter one · Kombucha

Tea, sugar, time, and a mother.

Kombucha is sweet tea that a living culture has slowly turned into something bright, tart and alive. Ours is raised on oolong, in Singapore, in small batches.

Oolong tea steeping for kombucha

A short history

Two thousand years of a very patient drink.

~220 BC

First records of fermented tea in north-east China, prized for its lift and long keeping.

1900s

The drink travels the Silk Road west through Russia and central Europe; the mother is passed hand to hand.

Today

Raised in a licensed Singapore brewery on oolong and black tea, one 21-day batch at a time.

How we raise it

Twenty-one days, no shortcuts.

1

Alive, unpasteurised

Billions of live cultures in every bottle. We never heat-treat, so it must stay chilled — and it tastes like it.

2

Less sugar, more time

The mother eats most of the sugar over a 21-day ferment. Under 4g per 100ml, no sweeteners added after.

3

Brewed in Singapore

Small batches, bottled the week they ship, delivered cold. Never more than a few days from tank to fridge.

Why people drink it

What a living drink does for you.

We are brewers, not doctors. Here is what is in the bottle, and what the research so far suggests it does — no more, no less.

  • Live cultures — a diverse mix of bacteria and yeasts, the same family found in yoghurt and kefir.
  • Organic acids — acetic and gluconic acids from the ferment, behind the tartness and the long shelf life.
  • Tea polyphenols — the antioxidants of oolong and black tea carry through the ferment.
  • A soda swap — a fraction of the sugar of a soft drink, with real fizz and real flavour.

Kombucha is a food, not a medicine. It contains trace alcohol (under 0.5% ABV) and caffeine from the tea. If you are pregnant, immunocompromised or unsure, ask your doctor first.

In every bottle

Five things. You can pronounce all of them.

Filtered water, oolong and black tea, organic cane sugar, our mother culture, and whatever real fruit, flower or root gives each flavour its name. Nothing else.
