Label First: When to Refrigerate Kombucha and Why Aboocha Ships Cold

Does kombucha need refrigeration? For raw, unpasteurised kombucha the sources we checked point one way: yes, keep it cold. For pasteurised bottles the answer depends on the label. This guide answers does kombucha need refrigeration with what we could verify, what we could not, and a simple way to decide for each bottle.

We brew raw kombucha in Singapore, so we are not neutral. We separate verified facts from our own statements, and we leave out rules of thumb that we could not source.

TL;DR: Does kombucha need refrigeration? Raw, unpasteurised kombucha should be kept cold, because it keeps fermenting while it is warm. Colorado State University Extension says both homemade and commercial kombucha should be stored refrigerated for safety. Check the label for "pasteurised" or "raw". If it says nothing, treat it as raw and refrigerate. We found no reliable source for how long a bottle can sit out, so we do not give a number.

Does kombucha need refrigeration? The short answer

The question "does kombucha need refrigeration" has a two-part answer. Raw, unpasteurised kombucha contains live cultures, and the cultures keep working while the bottle is warm. Pasteurised kombucha has been heat-treated, so it behaves more like bottled tea. The label tells you which you have.

The Colorado State University Extension states: "For safety, both homemade and commercially prepared kombucha should be stored refrigerated." The Kendall Reagan Nutrition Center at Colorado State University says to keep finished kombucha at about 39 degrees Fahrenheit, an average refrigerator temperature, to keep acid and bacteria levels low. That is about 4 degrees Celsius.

Raw or pasteurised: how the answer to does kombucha need refrigeration changes

The biggest factor is whether the bottle is raw or pasteurised. Heat treatment stops the live cultures. Without live cultures, fermentation cannot continue in the bottle. With them, it can.

TypeWhat it meansDoes kombucha need refrigeration?
Raw / unpasteurisedLive cultures still activeYes, keep it cold from the start
PasteurisedHeat-treated, cultures stoppedCheck the label; many are sold shelf-stable
Label says nothingYou cannot tellTreat it as raw and refrigerate

We have not verified a list of which brands pasteurise, so we do not name any. The label is the evidence. Look for "pasteurised" or "unpasteurised" near the ingredients, and for an instruction such as "keep refrigerated". Our guide on how to choose kombucha covers the rest of the label.

What refrigeration does: why does kombucha need refrigeration at all?

Cold slows microbial activity. It does not remove the cultures, but it slows them down. Warmth does the opposite. The Colorado State page warns that bottles left capped at room temperature too long could build up carbon dioxide, with a risk of explosion. That is the practical reason raw kombucha is a cold-chain product.

In plain terms, a warm sealed bottle keeps making gas with nowhere to put it. A bottle that has been warm for a while should be opened slowly. Point it away from you, loosen the cap a little and let the pressure out before opening fully.

This is general safety reasoning based on the pressure warning above. It is not a measured figure for any particular bottle.

Does kombucha need refrigeration to keep alcohol down?

Fermentation produces a little ethanol, and the amount matters to people avoiding alcohol. The cantonal laboratory of Basel-Stadt in Switzerland tested 12 kombucha drinks bought in shops. It measured alcohol from 0.2% to 0.9% by volume, and six samples exceeded 0.5%, the level it uses as its alcohol-free threshold.

One of the unpasteurised Swiss samples, stored correctly in the fridge, rose from 0.84% to 1.05% by volume within the recommended 5-day consumption period after opening. So even properly chilled raw kombucha can change. That is one lab report on 12 samples in one country, and it is not a Singapore ruling.

What we can say is limited. Cold storage is the standard advice, and raw kombucha can still contain more alcohol than the label suggests. If you avoid alcohol completely, ask the seller for lab data. Our guide on kombucha and alcohol goes through the numbers.

How long can kombucha sit out? What we could and could not verify

Many articles give a precise time that kombucha can sit out. We could not find a reliable source for one, so we do not give a number. The old version of this article said a bottle left out for about 24 hours is "usually fine". We removed that, because it was our own rule of thumb and not a sourced rule.

What the sources do support is simple. The Colorado State page says commercially prepared kombucha should be stored refrigerated. If a raw bottle has been warm for an unknown time, the safest assumption is that it has kept fermenting.

  • Unopened, raw: keep it in the fridge from the moment you receive it.
  • Unopened, pasteurised: follow the label. Refrigerate after opening.
  • Opened, any type: reseal and refrigerate. Our own rule of thumb is to finish it within a few days.
  • Left warm for a long or unknown time: check for the spoilage signs below, and when unsure, do not drink it.

The "few days" figure is our own suggestion. The only specific figure we found was a 5-day consumption period printed for one Swiss product in the lab report above, and it applies to that product only.

What happens when kombucha is too warm or frozen?

Left warm, raw kombucha keeps fermenting. It tends to get fizzier and more sour, and pressure builds in a sealed bottle. That is the same continued fermentation the sources warn about. Singapore is hot all year, so a bottle left in a warm bag or car is a real risk.

We could not find a source on freezing kombucha, so we do not claim what freezing does to the cultures. One thing is basic physics: liquids expand as they freeze and can crack a glass bottle. We would not freeze it.

Signs your kombucha has gone wrong

Extra fizz or a sharper tang after some warmth is a sign of continued fermentation. These signs mean you should stop and discard.

  • Mold: the Colorado State food safety page describes mold as black, gray, brown, green or even blue, and says that if mold appears, "The SCOBY and all liquid must be discarded."
  • A bad smell: a rotten or sulphur-like smell is not the normal tangy, vinegar note.
  • A swollen or leaking cap: this signals pressure buildup. Open it slowly or discard.
  • Anything you are unsure about: do not drink it.

Contamination is a bigger concern with home brewing than with commercial bottles in our reading, but the Colorado State page notes that even though the pH is kept relatively low, contamination can still occur. We cannot judge a bottle from here, so use your own judgement and err on the side of throwing it away.

Carrying kombucha and delivery in Singapore's heat

If you buy kombucha in a shop, put it in your bag last and go straight home. An insulated bag with an ice pack helps on a long trip. That is our practical suggestion and it is not from a tested guide.

For online orders, ask how the bottles are delivered. Insulated, chilled packaging is a good sign. A plain courier box on a hot day is not. Our guide on cold-chain beverages in Singapore explains what a cold chain is.

Does kombucha need refrigeration after opening?

Yes, and this is the one point where every source we read agrees. Once a bottle is open, the carbonation is already starting to escape and the drink is exposed to the air. So the answer to does kombucha need refrigeration after opening is simple: reseal it and put it back in the fridge.

That applies whether the bottle was raw or pasteurised. A pasteurised bottle can be stable on the shelf until opened, but once opened it is no longer a sealed product. The label often gives an instruction for use after opening, and if it does, follow it before anything we say.

We do not give a verified number of days. Our own rule of thumb is to finish an opened bottle within a few days, and sooner if you want the fizz. That is a taste suggestion and not a safety limit.

Does kombucha need refrigeration if it is pasteurised?

Not always. Pasteurised kombucha has been heat-treated so that the live cultures stop, and many pasteurised drinks are sold at room temperature. The honest answer to does kombucha need refrigeration for a pasteurised bottle is: follow the label, and refrigerate it after opening.

Two cautions apply. First, you cannot tell by looking. A can or bottle on an ambient shelf might be pasteurised or might simply have been stored badly, so the label is the only reliable guide. Second, pasteurised kombucha no longer contains live cultures, so it is a different product from a raw one. Our guide to the best kombucha in Singapore explains why that matters when you shop.

Does kombucha need refrigeration when you travel or carry it?

For a short trip, a few hours in a bag is a different matter from a day in a hot car. We could not find a tested time limit, so we avoid giving one. What we can say is that does kombucha need refrigeration on the move is a question of heat and time: the hotter it is and the longer it lasts, the more the cultures keep working.

  • Keep raw bottles out of direct sun and out of a parked car.
  • Use an insulated bag with an ice pack on longer trips.
  • Put bottles in the fridge as soon as you arrive.
  • Open a bottle that has been warm slowly, pointing it away from you.

These are practical suggestions based on the pressure warning from Colorado State, not tested instructions. If a bottle has been warm for a long time, use the spoilage signs above.

Does kombucha need refrigeration in Singapore's climate?

The sources we read come from the United States and Switzerland, so none is about Singapore specifically. But the logic carries over. Warmth keeps raw kombucha fermenting, and Singapore is warm and humid all year, with no cool season to help. So the case for does kombucha need refrigeration is, if anything, stronger here than in a cooler country.

This is our reasoning and not a measured result. It is the reason we pay so much attention to the delivery chain. When you order online, ask how long the bottles spend between bottling and your door, and how they are kept cold on the way.

Myths about does kombucha need refrigeration

  • "Kombucha is sour, so it cannot spoil": acidity helps, but the Colorado State page says contamination can still occur.
  • "The fizz means it is fresh": extra fizz can also mean continued fermentation after warmth.
  • "A can is always shelf-stable": the container does not tell you whether it was pasteurised.
  • "If it does not smell bad, it is fine": smell is a useful sign, but not a guarantee, so use all the checks together.

The best answer to does kombucha need refrigeration is the boring one: read the label, keep raw bottles cold, and throw away anything that looks or smells wrong.

A five-second way to decide, bottle by bottle

When you stand in front of the fridge, you do not need microbiology. Read the label and decide.

  • If it says "unpasteurised" or "raw", refrigerate it.
  • If it says "pasteurised", follow the storage line, and refrigerate once opened.
  • If it says nothing, refrigerate it, because that choice costs you nothing.
  • If it has been warm for a long time and you are unsure, check for the spoilage signs.

That default protects flavour and costs nothing, and it matches the written advice from Colorado State University Extension.

Does kombucha need refrigeration?

Raw, unpasteurised kombucha should be kept cold, because the live cultures keep fermenting when it is warm. Colorado State University Extension says commercial and homemade kombucha should be stored refrigerated for safety.

Does unopened kombucha need refrigeration?

If it is raw, yes. Pasteurised bottles may be sold shelf-stable, so follow the label. If the label says nothing, treat the bottle as raw and refrigerate it.

What temperature should kombucha be stored at?

The Kendall Reagan Nutrition Center advises about 39 degrees Fahrenheit, an average refrigerator temperature, which is about 4 degrees Celsius.

How long can kombucha sit out of the fridge?

We could not find a reliable source for a safe time, so we do not give one. If a raw bottle has been warm for a long or unknown time, check for spoilage signs and discard it if unsure.

What happens if kombucha is not refrigerated?

Raw kombucha keeps fermenting, which can make it fizzier and more sour and build pressure in a sealed bottle. Colorado State warns about carbon dioxide buildup in bottles left capped at room temperature.

Can you freeze kombucha?

We found no source on freezing kombucha. Liquids expand when frozen and can crack a glass bottle, so we would not freeze it.

How long does opened kombucha last?

Reseal and refrigerate it. Our own rule of thumb is to finish it within a few days. That is not a sourced figure, and a product label may say otherwise.

Does refrigeration stop the alcohol rising?

Not entirely. A Swiss laboratory report found one unpasteurised sample stored correctly in the fridge rose from 0.84% to 1.05% within its 5-day consumption period after opening. Ask the seller for lab data if you avoid alcohol.
