Does jun kombucha have alcohol? Yes, a small amount. Jun kombucha is fermented tea, and fermentation makes ethanol, so the honest answer is a trace rather than zero. The harder question is how much, and nobody has published a measurement of jun itself that we could find. This guide sets out what lab studies of kombucha and honey ferments did measure, what we state about our own jun, and where the real uncertainty sits.
We brew jun and kombucha in Singapore, so we are not neutral. We sell jun tea Singapore and kombucha Singapore, and we mark every statement that is our own and has not been independently audited. If you are still getting to know the drink, start with what is jun tea, then come back to the alcohol question.
TL;DR: Does jun kombucha have alcohol? Yes, a trace, because fermentation makes ethanol. Studies of kombucha found anywhere from 0% to 1.29%, and a honey-sweetened ferment measured 0.49 to 0.75% right after brewing and about 1.6 to 1.7% after a month in sealed bottles in the fridge. We found no published measurement of jun itself. Our own stated figure is under 0.5% ABV, which has not been independently audited, so if you must avoid alcohol entirely, treat it as not zero.

Does jun kombucha have alcohol? The short answer
Every fermented drink contains some alcohol, and jun kombucha is no exception. The Wikipedia entry on jun describes jun as green tea sweetened with honey and fermented with a symbiotic culture of bacteria and yeast. Yeast turns sugar into carbon dioxide and ethanol, which is why it is both fizzy and slightly alcoholic.
So does jun kombucha have alcohol in a quantity that matters? That depends on who you are and why you are asking. These are the points we would want to know first:
- Yes, a trace: fermentation makes ethanol, so the answer is never exactly zero.
- Measured values vary widely: in studies of kombucha, from none detected to above 1%.
- It can rise: in sealed bottles, fermentation can continue even in the fridge.
- No jun measurement found: the numbers we cite come from kombucha and a honey ferment.
- Our own figure: under 0.5% ABV, our statement, not independently audited.
The sections below explain each point so that you can decide whether our answer to does jun kombucha have alcohol is good enough for your situation.

Why does jun kombucha have alcohol at all?
The reason is the process. Tea is sweetened, here with honey, and a culture of yeast and bacteria is added. The yeasts eat sugar and produce ethanol and carbon dioxide. Bacteria then convert part of that ethanol into acids, which is what makes the drink tart. They rarely remove it entirely.
That is also why the question does jun kombucha have alcohol never has a flat zero for an answer. Brewers can steer the result by controlling time, temperature and sugar, and they can stop the ferment by chilling or pasteurising. But a raw, living drink carries on fermenting to some degree, and the figure on the day it was bottled is not always the figure on the day you open it.
Honey changes the sugar picture, as we explain in our guide on what is jun tea. Honey is mainly fructose and glucose, which the culture can use directly. That is one reason we do not assume jun behaves exactly like kombucha made with cane sugar, and why we say plainly where the evidence stops.
Does jun kombucha have alcohol? What lab studies of kombucha measured
No study of jun alcohol content turned up in our search, so we start with the nearest evidence: measurements of kombucha. A 2022 laboratory study of nine commercial kombucha products found that ethanol was detected in eight of the nine products. The values ranged from 0% in one product to 1.29% in another.
That range is the key lesson. The nine products were all sold as kombucha, yet they differed greatly. The authors found large differences in the chemistry and microbes of the products, and say that tea bases, starter cultures and the duration of fermentation may all contribute. Brand matters more than category.
A second source is a report from the cantonal laboratory of Basel-Stadt in Switzerland. It tested twelve kombucha drinks and measured between 0.2% and 0.9% alcohol by volume. All twelve respected the declaration limit of 1.2% described in the report. We read the report in German and the figures here are our own translation.
The same report says six of the twelve samples, four of them unpasteurised Swiss kombuchas, were above 0.5% by volume, which it treats as the upper value for drinks described as alcohol-free. We state that as a Swiss laboratory finding. We have not verified any equivalent Singapore rule, so we do not claim one.
Does jun kombucha have alcohol when honey is the sugar?
This is the closest we can get to jun. The 2023 study in Foods on kombucha made with a Greek mountain tea sweetened with thyme honey fermented a mountain tea with 75 grams of honey per litre and a kombucha culture. They stopped the ferment when the acidity reached the range they wanted, which took less than four days in their tests.
Ethanol was zero before inoculation. After fermentation it measured 0.75%, 0.67% and 0.49% by volume in the three sample groups. So in a honey-fed ferment of this kind, the answer to does jun kombucha have alcohol was yes, and under 1% when the drink was freshly finished.
Treat that with care. It is one recipe, using a mountain tea rather than green tea, a particular honey, and the authors' own culture. It does not describe our jun or anyone else's. What it does show is that a honey ferment can produce roughly the same order of alcohol as the kombucha measured elsewhere.

Does jun kombucha have alcohol that rises in the bottle?
It can, and this is the part most people miss. The same Foods study stored the bottled drink in sealed bottles at 4 degrees Celsius for 30 days. The ethanol then measured 1.70%, 1.66% and 1.61% by volume. The authors conclude that fermentation continues at a slow rate during refrigeration.
The Swiss report saw something similar on a smaller scale. For one unpasteurised Swiss sample, storing an opened bottle chilled for the recommended five days raised the alcohol from 0.84% to 1.05% by volume, according to the report. The drink was kept cold and used within the advised period, and it still moved.
The Foods paper also quotes another study, which we did not read ourselves, in which commercial kombucha products measured 1.12% to 2.00% ethanol by volume. We repeat that only as quoted by the Foods authors. Taken together, the sources say that does jun kombucha have alcohol is a question with a moving answer.
Practical takeaway: a bottle that has sat out, or been kept long past its date, is more likely to have more alcohol than the day it was filled. Keep raw bottles cold and drink them within the date. Our guide on whether kombucha needs refrigeration explains why.

Does jun kombucha have alcohol at Aboocha? Our own statements
Aboocha brews kombucha and jun tea in small batches in Singapore. These are our own statements and have not been audited by an independent party.
Our Jun Original page states that the bottle contains trace alcohol, under 0.5% ABV, a little caffeine from the green tea, and honey. It also says our jun is raw and unpasteurised, brewed cooler and slower than our kombucha. These are our statements, and they have not been independently audited.
| Item | What we state for our jun |
|---|---|
| Alcohol | Trace, under 0.5% ABV, our own stated figure, not independently audited |
| Live culture | Raw and unpasteurised |
| Ingredients | Filtered water, green tea, raw unpasteurised honey from a single apiary, our jun mother, real fruit or root |
| Storage | Keep chilled; we deliver cold |
| Honey | Not suitable for infants under 12 months |
| Price per bottle | $7.50 |
Here is how we would read our own figure honestly. Under 0.5% is the number we state for our drinks. The studies above show that raw ferments can move over time and between batches. If you need certainty for religious, medical or legal reasons, ask us for the most recent test information rather than relying on a general figure from an article.
How to check a bottle: does jun kombucha have alcohol on the label?
Whichever brand you buy, a few habits make the answer to does jun kombucha have alcohol much clearer:
- Look for an ABV figure: a stated percentage is more useful than the words non-alcoholic.
- Check whether it is raw or pasteurised: raw bottles can keep fermenting.
- Read the storage line: chilled products should stay chilled.
- Check the date: older bottles may have more alcohol.
- Ask the brewer: a good brewer can tell you how the figure was measured and when.
If a brand cannot say how its figure was measured, treat the number as a claim rather than a fact. The same rule applies to us, which is why we label our figures as our own statements.
Does jun kombucha have alcohol in amounts that matter?
Numbers help here, so here is our own arithmetic, clearly labelled. It is an illustration for a 330 mL serving, not the size of our bottle. At 0.5% by volume, 330 mL holds about 1.65 mL of ethanol, or roughly 1.3 grams. At 1.7%, the value the honey study measured after 30 days in the fridge, the same serving holds about 5.6 mL, or roughly 4.4 grams.
We use 0.789 grams per millilitre for the density of ethanol. These are calculations, not measurements of any product, and they do not tell you what a safe amount is for you. Alcohol affects people differently, and some people must avoid it entirely.
For driving, we do not give a threshold, and we have not verified a Singapore rule, so we will not state one. Our guide on driving after kombucha covers what the numbers do and do not say. When in doubt, do not drive.
Who should ask first before drinking jun kombucha?
A trace is still not zero, so some people should take extra care. If you avoid alcohol for medical reasons, are pregnant, take regular medication, or are in recovery, ask a doctor or pharmacist before making jun a habit. Our guide on kombucha and medication interactions lists questions worth asking.
Honey adds another point. Our own page says our jun is not suitable for babies under 12 months. For older children, our article on whether kombucha is safe for kids sets out what we could and could not verify. We found no study that sets a safe daily amount of jun for anyone.
If you are asking does jun kombucha have alcohol because of caffeine or other effects, our guides on kombucha caffeine and kombucha side effects cover the wider picture.
Does jun kombucha have alcohol, and is it halal?
The alcohol question and the halal question overlap, but they are not the same. Whether a drink with a trace of fermentation alcohol counts as halal is a religious and certification matter, and different authorities can take different positions. We are not a religious body and we do not claim halal certification for our drinks.
Our guide on whether kombucha is halal and legal in Singapore explains who issues halal certificates in Singapore and what we could and could not verify. We have not verified a ruling on jun, so we will not state one. If this matters to you, ask the relevant authority directly.
Does jun kombucha have alcohol differently from kombucha?
We do not know, and we want to be clear about that. We found no like-for-like comparison of alcohol in jun against kombucha. The honey study suggests honey ferments can land in the same range as the kombucha studies, but it is one recipe, so it cannot settle the matter.
What we can say is that the process is similar, the culture is similar and the result is a trace. Our own jun and kombucha both carry the same stated figure of under 0.5% ABV, which is our own statement. For a wider comparison of taste, price and ingredients, read our guide to jun tea vs kombucha.

Common mistakes when asking does jun kombucha have alcohol
- Assuming non-alcoholic means zero: it usually means under a threshold.
- Using a kombucha number as a jun number: we found no jun measurement.
- Ignoring storage: warm or old bottles can have more alcohol.
- Trusting a single figure forever: raw bottles can change over time.
- Skipping the question for religious reasons: ask the right authority.
Avoiding these keeps the answer to does jun kombucha have alcohol honest and useful.
What we checked and what we could not
- Checked: the Wikipedia entry on jun, the 2022 laboratory study of nine commercial kombucha products, the 2023 Foods study on honey-sweetened kombucha, and the Basel-Stadt report on twelve kombucha drinks.
- Could not find: a published measurement of alcohol in jun, a like-for-like comparison of jun and kombucha, and an independent audit of our own figures.
- Our own statements: everything labelled as ours, including the under 0.5% ABV figure, prices and ingredients.
This article is general information, not medical or religious advice. If you have a health condition, take medication or must avoid alcohol entirely, talk to a doctor, pharmacist or the relevant authority before drinking.
Does jun kombucha have alcohol?
Yes, a trace, because fermentation makes ethanol. We found no published measurement of jun itself. Studies of kombucha found from none detected up to 1.29%, and a honey ferment measured 0.49 to 0.75% when fresh. Our own stated figure is under 0.5% ABV, not independently audited.
Does kombucha make alcohol?
Yes. Yeast in the culture turns sugar into ethanol and carbon dioxide, and bacteria convert part of the ethanol into acids. Some alcohol usually remains. Measured values vary widely between products, so the label and the brewer matter more than the category.
Is jun kombucha non-alcoholic?
Not strictly. Brewers often call it non-alcoholic or low alcohol when it is under a labelling threshold, but a trace remains. If you must avoid alcohol entirely, treat jun as not zero and ask the brewer how its figure was measured.
Can alcohol in jun kombucha increase over time?
It can. A honey-fermented kombucha rose from under 1% to about 1.6 to 1.7% after 30 days in sealed bottles at 4 degrees Celsius. A Swiss report saw an unpasteurised sample rise from 0.84% to 1.05% in an opened bottle kept chilled.
Can a kid drink kombucha or jun?
Not infants under 12 months, because jun contains honey. For older children we found no study that sets a safe amount of kombucha or jun, and both contain trace alcohol and caffeine. Ask a doctor first if you are unsure.
Is 1 kombucha a day too much?
We found no study that sets a safe daily amount of jun or kombucha. Both contain caffeine, acid and trace alcohol, and can interact with some medicines. If you take regular medication or have a health condition, ask a doctor or pharmacist.
Is kombucha high on caffeine?
Not usually, but amounts vary by brand and brew. Jun starts from green tea and kombucha usually from black tea. We did not find a published caffeine figure for jun, so we do not give one. See our guide on kombucha caffeine.
Where can I buy jun in Singapore?
We sell four jun flavours at $7.50 a bottle, with free delivery on orders of $80 and above and on every subscription. Visit our jun tea Singapore page or the shop, and read each brand's label for ABV, ingredients and storage.
